Looking for top of the line kitchen knives, but not sure what you should buy? Of course, going to your local retail store does not allow for you to feel how sharp the blade is or to evaluate the knives through the plastic packaging.
Instead, try visiting a gourmet shop in your area and seeing what they have to offer. Once there, you will be introduced with a variety of knives of different styles and brands that have a price tag to match. Some knives that you may see there are boning knives, slicing knives, paring knives, and Chef knives; some will be offered in sets and some will be sold individually. It can easily become a perplexing situation.
You will find many knives at the gourmet store, and they will have a higher quality than those found at your local retail store. Generally, though, knives have developed over time so very few are of poor quality.
Depending on the steel used and the process used in making the knife, the price of it will differ. Some knives may be created in a forge or it may have come from a sheet. Then it matters whether or not a pattern has been made on the sides of the knife by repeatedly folding the steel back. If it has, the steel is known as Damascus style. You may notice several knives in Japanese style, some of which will have handles shaped in an octagon called “Dee” and will have tips that are blunt. Some names that you may come across are: Usuba, Deba, Yanagi, Santoku, and Guyoto.
You only need a couple of knives for the basic kitchen. The majority of any heavy cutting you might be doing, for example, when making stews and soups, can be done using a chef’s style knife that is either a 6 or 8 inch. Paring and utility knives are perfect for more delicate cutting, such as when you’re cutting a tomato or an apple. A boning or fillet knife may can come in handy and prove useful for cutting meat and trimming fish. After you ad a couple of steak knives for the occasional steak dinner as well as a serrated bread knife, you’ll probably have all the knives you need for your collection.
